I haven’t had a good sugar cookie in a while, and anytime I do it’s from the store/bakery. That’s when I embarked on this little journey to find and conquer.Sugar cookies are quite simple, I know. But these particular kind really stood out among all the other tested recipes.

With the perfect level of sweetness, soft and light texture, and the right amount of frosting, these cookies captured the hearts of this household and my coworkers.

Frosted Sugar Cookie Bars
Recipe adapted from Inspired By Charm
Yields 24 bars

For the Cookie:
– 2 1/2 cups all-purpose flour
– 1/2 teaspoon baking powder
– 1/2 teaspoon salt
– 1/2 cup (one stick) unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 2 tablespoons sour cream
– 1 teaspoon vanilla extract

For the Frosting:
– 1/2 cup (one stick) unsalted butter, softened
– 4 cups confectioners’ sugar
– 1/4 cup half and half (or whole milk)
– 1 teaspoon vanilla extract
– 1/2 teaspoon almond extract
– pinch of salt
– food coloring and sprinkles (optional)

Directions:
Preheat oven to 375 F. Begin by lining a 15x10x1-inch baking sheet with aluminum foil. (You can use a 13×9-inch pan for thicker cookies.) Grease the foil with cooking spray.

In a large bowl, sift together the flour, baking powder, and salt. Set aside.

Cream together the butter and sugar until light and fluffy, about 3 minutes. Then, incorporate the egg, sour cream, and vanilla. Slowly add the flour mixture until well combined.

Very gently press the dough into the foil-lined baking pan. Bake for 14-17 minutes or until the edges are lightly golden. Allow to cool in the baking pan.

For the frosting, begin by creaming the butter. Slowly add the confectioners’ sugar, alternating with milk until you achieve the desired consistency. Then add the vanilla and almond extract along with the salt. Food coloring can also be incorporated at this time.

Once the sugar cookie bars are cool, spread on the frosting. To achieve an ombre effect like I did, spread on the different color frostings leaving about a half-inch gap in between each. Then, blend them together. If desired, top with sprinkles before the frosting sets.
