Sweet Potato Casserole with Pecan Topping–gluten, dairy and sugar free

The holidays are undoubtedly my favorite time of the year. It truly brings out the little girl in me and just get’s me all giddy and excited for all the little things! I swear i’m 26 going on 6 😉

When it comes to the holidays though, nothing screams comfort food to me more than a sweet potato casserole ❤ Up until I moved out of my parents house, I was always in the kitchen with my mom either baking, cooking or learning. I loved standing by her side and I owe it all to her for my love of cooking and baking that I took with me!

But–as I’ve learned alot about my body in these past couple of years (learning what fuels it vs what makes it sick) I unfortunately can’t indulge in those good old sweet potato casseroles like I used to because of all the sugars and –truly– unnecessary ingredients that most of them have!
.
But then this recipe came up in my searches, and i’ve been hooked ever since! The great news though? It’s super easy, crazy delicious, doesn’t leave you feeling deprived of the ‘real stuff’ AND–MY DAD APPROVES!! (Pickiest eater ever, that man is)

Banana Pancakes – 21 Day Fix approved

Ingredients:
– 1/2 cup oats
– 1 banana
– 2 eggs
– 1/2 cup all-natural, unsweetened Apple sauce
– 1 tsp vanilla
– Dash of cinnamon

Directions:
1. Blend the oatmeal until it starts to become like the consistency of flour, but still lumpy
2. To the blender, add the banana, eggs, applesauce, vanilla and cinnamon and mix until well combined
3. Turn heat to medium using a nonstick skillet with a tablespoon of coconut oil
4. Use 1/4 cup of batter for each pancake, cook each side until golden-brown (makes about 8-10 pancakes)

**I love topping these with honey or REAL maple syrup and choosing between: a mixture of Greek yogurt+PB2, bananas or sautéed cinnamon apples!👌🏼

Black Bean & Pumpkin Brownies

We all need to treat ourselves; sometimes in way of a good meal, with a good drink – OR – with a good dessert 🙂

Anything with chocolate is my best friend. So brownies are an easy way to my heart! These Black Bean Pumpkin Brownies are fudgey, thick, chocolatey, gooey and filled with with melty chocolate chunks and crunchy pecans.

And yes, these babies are flour free, sugar free, dairy free AND PURE BLISS ❤

Sweet Potato and Black Bean Burger

I loveee myself a good burger.

Actually, a medium rare burger accompanied by a good beer? THAT my friends is a fantastic treat meal 😀

But every once in a while, sweet potatoes come along and can be a nice little substitute. These soft and nutritious pillows of deliciousness surely deliver. OH, and husband approved, time and time again 🙂
